haha... ripe old age of 28 - just wait till you hit your 30s! The cupcakes look super fudgy and moist, love the piped-in whiskey spiked filling! And you are right about the Guiness not adding a bitter flavor, I tried a Guinness cupcake at the Guinness storehouse in Dublin last year and it was delicious, no bitter taste at all.


Mmmmm...that takes the Guiness chocolate cake to another level, for sure. I've only made the cake, but I can only imagine how divine it would be with the other additions.

I made these yesterday with my boyfriend for a belated St. Patty's Day and they were amazing! We added a little extra whiskey and Bailey's to the ganache and frosting respectively, because we are lushes, but I was wondering, can you freeze the cupcakes filled and frosted in the freezer for a week? My b/f had to go home and is sad he won't be able to have any until next week if they are still around.

I made these cupcakes for the Notre Dame/Michigan football game and they easily were more popular than the outcome of the game! Though it seems like a lot of work, the directions were fantastic and very simple to follow. The Guinness in the cake part gave a nice, edgy sweetness to the regular chocolate cake. The ganache just melted into the cake and really enhanced the chocolate flavor without overwhelming it. I was initially nervous about cutting a core into the cupcake, but the piping tip suggestion was spot on and make nice, uniform ganache holes. I got so many compliments on the Bailey's frosting, which gets better after it sits a day. I brought some extras to friends at school and they got eaten right up! I will definitely be making these a staple in my dessert repertoire!
