I think the crust has too much fat in it thats why it gets "melty" ours got a little melty also, but didn't burn around the edges.............great flavors though!

Your flavor combinations are to die for! And I think your galettes look lovely. Also, many of us abide by the rule of inverse proportion: the more "rustic" the dessert, the better the taste!


Oh tropical galette with a coconut custard! How perfect that would be!! Maybe next time you use pie dough you too should sip on Crown Royal. I promise it makes all your pie dough cares disappear! hahaha!

I don't think I knew you were in the DC area! So am I and it was uuuuuuuuuuuugly here last weekend(see my blog!) I had the same problem with my crust - exactly the same. Maybe it's DC and not us!


How frustrating! I definitely have baking days where things don't seem to go right no matter what I do... So now you have me wondering what brown sugar strawberries are.

Love all the flavor combinations you came up with! I agree, these are supposed to be rustic!

A couple ideas that might help give better pie crust next time -- 1) Maybe you did use too much water 2) Like Hannah suggested, cut down on the butter in the crust by a tablespoon or two (it will still be wonderful) 3) Try chilling or freezing the galette before putting it in the oven -- it really helps firm up the dough.
